En este trabajo se presenta la estructura preliminar del galactomanano extraído de semillas de Prosopis affinis (Leguminosae, Mimosaceae) a temperatura ambiente
(GMPRT) y 80°C (GMP80), utilizando gomas guar y garrofín como referencia. El análisis de azúcares mostró la presencia exclusiva de galactosa y manosa, con una proporción Man:Gal de 1,5:1. El análisis de metilación de GMPRT y GMP80 mostró la presencia de una cadena lineal de residuos de manosa unidas en C4, con ramificaciones de residuos galactosil en C6 en cada segundo residuo de manosa. Estas estructuras se confirmaron por experimentos de RMN (1D-TOCSY y 2D-HSQC-TOCSY). |
